Evaluation of the enzymatic stability of BjussuLAAO-II (a) and BmooLAAO-I (b) over a 42-day period stored at 4ºC. LAAO activity was determined by incubating each LAAO (2 μg) for 30 min at room temperature with 2 mM o-phenylenediamine, 1 U/mL horseradish peroxidase, 5 mM of each L-substrate and 1 M Tris-HCl buffer pH 7.2. The reaction was stopped with 10% citric acid and absorbance was recorded at 490 nm. The results were then expressed as percentage of relative activity, defining the activity of day 1 as 100%. Data expressed as mean values ± SD (n = 3). Values significantly different from day 1 were indicated by *(p<0.05)
